Yikes, almost a month since I last posted! December was super busy thanks to the short Christmas season, travelling, gatherings, and birthday celebrations. So there wasn’t much new going on in the kitchen except some molasses cookies that were supposed to be topped with a vegan caramel that just did not work out.
Anyway, I will say that over the last month or so, I’ve come up with my new favorite way to start every day: coconut milk vanilla chai latte. I don’t use the actual coconut milk in the can; I used So Delicious Coconut Milk Beverage (unsweetened). I love this stuff. It is the best milk out there, in my opinion, though I don’t drink it straight very often.
What I do is mix it in with a cup of Bigelow Vanilla Chai tea. I’ve tried other chai bags as well as loose chai and though they’re all good (and the loose ones are more authentic), my preference is for this vanilla chai. Just opening the box is a pleasure because it smells so good. And the taste with the milk is really quite decadent even though there’s less than 20 calories in it since I only use 1-2 ounces of the milk.
