I've been doing a lot of baking. It's unusual for me because I'm not good about following recipes exactly and when you bake, that's usually pretty important. But sometimes, you just want something really fantastic and the only way to get it is to make it yourself.
Last year, for the Sweet Relief Bake Sale, Jennifer Justus (of the Tennessean and of a nasty bite) made the Rosemary Olive Oil cake from 101 Cookbooks. It was one of the most wonderful things I've ever tasted. I'd been thinking about it for a year! So I made it myself.
Did I follow the recipe? Not reeeeealllly. But I think it turned out just fine using part all-purpose flour and part whole wheat flour as well as some light soy milk. And it tasted just fine with Ghirardelli chocolate chips but if I make it again (ha, of course I will), I will do what Jennifer did and use Olive & Sinclair chocolate. And not make it right before swimsuit season.
